Easy Bruschetta Chicken Recipe

This easy bruschetta chicken recipe comes together quickly for a healthy low carb weeknight dinner. Chicken breast is cooked on the stovetop and topped with a fresh tomato topping and drizzled with balsamic.

How to make this Easy Bruschetta Chicken Recipe


Place the chicken breasts in a large bowl. Sprinkle the salt, pepper, onion powder, garlic powder, and Italian seasoning over the chicken and add in the olive oil. Toss the chicken in the seasonings and oil until evenly coated. Marinate for at least 15 minutes or up to 8 hours.

Combine the bruschetta topping ingredients in a separate bowl.

Heat the grill or bring a grill pan to medium-high heat. Then, grill the chicken until it’s cooked through. (Approximately 5-7 minutes per side. The chicken is done when it reaches an internal temperature of 165F)
Top each chicken breast with a few spoonfuls of the bruschetta topping.
Drizzle the balsamic reduction over each chicken breast and garnish with chopped fresh basil and parmesan cheese.


What to serve with Bruschetta Chicken


This is a great summer time dish, so I like to keep it simple by serving this chicken with a fresh green salad. If you want this to be part of a heartier meal, I don’t think you could go wrong with serving this with some fresh pasta or cooked rice.

This recipe makes enough for four servings, and each serving is around 230 calories with 8g of carbs. It’s high in protein and low in fat. The bruschetta topping is loaded with vitamins, minerals and antioxidants so this can be part of a great well balanced meal.

The bruschetta topping for the chicken is so wonderfully fresh, and the key is to use the most perfectly ripe tomatoes you can!

You don’t have to make the topping ahead of time, but if you do, it will really let all of those flavors develop. I used Roma tomatoes but I would wager that halved, sweet cherry tomatoes would also work well.

Use skinless chicken breast, organic if possible.
The chicken can be cooked in a pan on the stovetop or on a grill.
Use the ripest tomatoes you can for the best flavor.

For the Chicken:

4 boneless skinless chicken breasts
1/2 teaspoon salt
